White and black truffles
The area is rich of this precious tuber that is part of its culinary tradition. The most popular is undoubtedly the "magnum Pico Tuber", "commonly called the White Truffle, with its unique taste makes each dish a unique experience. It is harvested throughout the winter and prefer greater depths than other truffles. Nose black, the most common and easy to find an intensity of flavor is slightly less than white, but without doubt it is also valuable and able to make each dish special. During the period October / November in Gubbio hosts the now famous "exhibition of Tarfuto White and food products ", where you can sample many varieties of truffles coming not only from the territory of Gubbio, but also from other parts of Italy.
